Did anyone make the #raw#cauliflower#salad#recipe last week? Here it is!
Raw #Cauliflower Salad, Takes 20 minutes, serves 6
½ a head of cauliflower
1 sweetcorn, kernels removed
1 sweet capsicum
a handful of roasted peanuts
3 Tbsp peanut oil
1 can of chickpeas
2 Tbsp Tahini
2 Tbsp of peanut oil
3 Tbsp of ground Almonds
a pinch of salt
Juice from 1 lemon
1. Finely dice cauliflower, carrots, capsicum and peanuts into sweetcorn sized pieces
2. Toss the above together in a bowl with sweetcorn and 1 Tbsp peanut oil
3. Make hummus by draining chickpeas and blending everything together into a smooth paste. Adjust to your tastes
4. Dollop hummus on top of the salad and add a few fresh coriander leaves (optional) before serving.
