STRAWBERRY COCONUT PUDDING

Pudding is a delicious snack staple that's typically high in sugar. We don't really "do" sugar, and neither should you. So we decided to create a low-sugar pudding recipe that's both delicious and good for you.
Prep time: 2 mins.
3/4 cup Low-fat cottage cheese
1/4 cup Coconut milk
1/2 cup Strawberries (frozen)
1/4 tsp Splenda
Combine all ingredients in a blender or food processor and puree until smooth. This recipe is between a pudding and shake. To thicken, add a scoop of protein powder (strawberry or vanilla). To thin, add a little water at a time until desired consistency is reached. Serves 2.
If you are lactose intolerant or wish to avoid dairy, replace the 3/4 cup cottage cheese with 3/4 cup lactose-free yogurt. Alternatively, you can substitute with non-cow's-milk dairy (e.g. goat's milk). For an additional treat, serve this pudding on top of fresh chopped fruit, such as apple, banana, pears, or berries or along with a serving of Wholesome Fruit Crumble. For some fruit variety, try substituting the strawberry with blueberry, blackberry or mango. This simple recipe makes a great bedtime snack and can be paired with Poached Pears, Homemade Granola or the Wholesome Fruit Crumble.
