Crunchy #raw beetroot #salad with pear and mozzarella
* 4 good size beetroots, peeled and cut into fine matchsticks * 3 ripe pears, peeled, cored and cut into matchsticks * 150 gr baby mozzarella * sea salt, black pepper * 1 small bunch fresh baby mint leaves * 6 tbsp cedar nut oil * Juice of one lemon * 1 large handful of pine nuts
Dress the beetroot and pear matchsticks in a cedar nut oil dressing ( #cedarnutoil+ lemon juice) and season with some salt and pepper.
Add baby mozzarella balls, and sprinkle over the baby mint leaves and the pine nuts.
Simple, but it's a #treat!
