Cozy Sundays ❤ I'm all up for a super cozy Sunday today, anyone else joining me? 🙆🏽 It's still a little grey outside but said to get sunny so I don't mind waiting for the sun to peak through. And I mean waiting for the sun with a cozy Sunday breakfast ain't too bad either. I'm an incredible sweet tooth for breakfast, savory breakfast lovers tell me how because it's a miracle to me.. Sadly, most of the vegan options for sweet slather-me-all-over-a-huge-slice-of-bread-spreads are fully loaded with artificial sugar, making it not so enjoyable for me at all. On the lucky side of things, fresh/frozen berries and chia seeds got us covered my sweet breakfast lovers! And I don't feel bad at all to slather my new favorite fruit and nut loaf by @myberryforest with some homemade chia jam! 💁🏽💁🏽 A combination worth dying for! Head over to Tina's blog asap to find the recipe for the fruit and nut loaf because it's da bomb and was gone within three days (no regrets here ✌🏼) For the chia jam; 2 cups of fresh or frozen berries 3-4 tbsp chia seeds Splash of lemon juice Heat up the berries in a pot over medium heat until they're soft and bubbly. Add in the chia seeds and stir until well combined, simmer for a few minutes before taking it off the heat and let it cook down. Slather a huge amount of chia jam a slice of bread, top your oats with it or spoon it out of the jar 😏 The jam keeps in the fridge for about a week! ☺ I hope you're all enjoying your Sunday! Stir fried soya chunks with vegetables :- Hey fellow foodies!! Today we are creating indo- chinese style recipe but much healthier. It doesn't require any frying and is loaded with high protein soya. Try out this stir fried soya chunks with crunchy vegies recipe and share your thoughts. Ingredients :- Soya chunks - 150 gms Cooking Oil - 4 tablespoons Crushed ginger garlic - 1 tablespoon Onion -1 large ( chopped ) Capsicum - 1 ( chopped ) Carrot - 2 ( chopped ) Cabbage - Around 100 gms ( chopped ) (Sauces of your choice ...) I used - Soya sauce - 2 tablespoons Vinegar - 1 tablespoon Red Chilli sauce - 1 tablespoon Corn starch - 1 tablespoon Red chilly powder - 1 teaspoon Honey or sugar - 1 teaspoon Salt to taste Water to boil the soya chunks - 3 cups Procedure :- Start with heating the water in a container with 1 teaspoon of salt and then add the soya chunks to it. Switch off the gas stove and let it soak in the water for 10 - 15 minutes. Now take it out of the water and squeeze the access water from soya chunks. Now heat 2 tablespoons of oil in a wok and stir fry soya chunks till it starts getting a nice brownish patches . Take it out on a plate and now in the same wok heat the remaining oil. Add the crushed ginger-garlic and stir for 20 seconds then add the onions and cook for 2 minutes. Time to add the remaining vegitables and sauté it. In the mean well mix all the sauces , vinegar, red chilly powder and Corn starch together and mix till there's no lumps. Now add the soya chunks to the vegitables and mix well then add the sauce mix. Stir properly and add 3-4 spoons of water in case the sauce starts to stick to the bottom of the pan. Check if any salt is required , be careful while adding it as there is enough salt in sauces and soya chunks at this point of time. Now add sugar or honey to balance the taste and then switch off the gas stove . Time to serve it with boiled rice or noodles. A co mnie urzeka w herbatnikach? 😎 - moje spazmy wylałam dawno temu w recenzji (wypasionego) oreo na moim wygasłym blogu: zarcie-zarelko-jedzonko.blogspot.com 😅] Ogólnie ta wersja była dla mnie milion razy lepsza od klasyka bo tutaj herbatnik wiódł prym i tłamsił smak kremu przez co ciastka naprawdę- sztosik! 😋 Co więcej, w takiej postaci herbatniki były obłędniejsze! 😵 Rozkosznie chrupały niczym sklejone kremem kakaowe chipsy. Delikatne, żwirowato i urzekająco-kakaowe z słodką, ale gnilną wstawką 😰 A pomyśleć, że ich nie chciałam! Przesłodzone, ale rozkapryszająco doprawione nutką soli. Już zrobiłam zapas z żabki! 🐸 Dla mnie czysty obłęd i bede brac ^^ Jak ktoś się jeszcze waha czy kupić… Sama nadziwic sie nie moge, aczkolwiek polecam 😊 PS Wezcie koniecznie jedna paczuszkę dla mnie 😄 Dobrej niedzieli ☺.

Indian style pasta :- Hey there my fellow foodies !! Congratulations we have almost reached the weekend. And it's time to try out new things , like the fusion dish we are sharing today . It's a pasta made with Indian spices and trust me it tastes amazing... lets begin !! Ingredients:- Any of these Pasta (penne ,fusilli macaroni) - 300 gms Cooking oil - 3 tablespoons Onion - 2 (chopped ) Tomato 4 (chopped) Ginger- 1 inch (crushed ) Garlic - 8 to 10 (crushed ) Green chilies - 2 Red chilly powder- 1 teaspoon Garam masala - 1 teaspoon Tomato ketchup- 2 to 3 tablespoons Soya sauce - 1 teaspoon ( optional ) Salt to taste Water to boil the pasta - 6 to 8 cups Procedure:- Start with boiling the water in a large container with 1 teaspoon of salt. Then add the pasta and cook it as per the directions on the packet. It shouldn't take more then 10 to 12 minutes. Drain the water when the pasta gets soft and keep it aside . Now in a wok or skillet heat the oil and add crushed ginger and garlic then cook for 30 seconds. Time to add the chopped onions and cook it till it gets translucent in color. Now add chopped green chilies , tomatoes and salt. Time to add red chilly powder and garam masala powder. Now cook everything till the tomatoes get soft in texture. At this time add the tomato ketchup to the pan as well . Along with ketchup soya sauce can also be added but it's totally optional. Add the boiled pasta to the wok and mix well . Let it cook for 2 minutes and then switch off the gas stove. Time to serve it with some home made garlic bread or any soft drink of your choice.
