Spent all night cooking this bird....while I slept 😴 Literally less than a half hour of prep time! Thoroughly cleaned a roaster chicken; stuffed it with 3 lemons-worth of wedges & 7 garlic cloves (next time adding some rosemary sprigs); and covered it in a mixture of 1 tbsp sea salt & 1-2 tbsp of thyme, black pepper, paprika, and cayenne (because I'm 🔥 obsessed). 6 hours in a crock pot at low (crock pots with digital timers are the best kitchen devices ever 🙌🏼) and I have a ton of perfectly cooked juicy chicken for the week with none of the greasiness and additives of the store bought ones 😒 My challenge for myself this week? Come up with simple, but flavorful #paleo recipes to put this bird to good use. I see an Austin-style breakfast taco in my future.... #healthycanbeeasy .
