Its important to start with quality ingredients. Unbleached flour is key to a quality bread. I tend to stick to all purpose, especially since I do not have the space at home to have multiple flours for different applications, more over, the protein content etc loses me every time. Rye and whole wheat are two other most commonly used, these will be a good place to start. Organic is optional but of course, any foodie or ecologist would tell you its obviously best. I used to opt out due to the price on Organic items but a little research lead me to this amazing gem that I now frequent.
