It's a banana pancake kinda morning here. These are so simple to make and offer a delicious and fairly healthy alternative to enjoy for breakfast or lunch.
Makes 4 pancakes
1 large / 2 small ripe banana(s)
2 organic eggs
1/3 cup coconut flour
Mash your banana(s), add your eggs and mix before adding the coconut floor. Coconut flour can be a little lumpy so just use a fork to break it all up and make sure it's all combined before adding it to the pan.
Heat your pan and add a little coconut oil, scoop in 1 tbsp+ of the mixture per pancake and flatten/spread the mixture with your spoon. Don't wait too long before you flip them over as they don't take long to cook.
At the moment I can't eat coconut so I simply substitute coconut for buckwheat flour and only use egg yolks, which still taste good. Ideally you want to serve this with coconut yoghurt, berries and a drizzle of raw honey, but anything goes. Hope you love it as much as we do.
