Plated with wild/long grain rice and blanched asparagus.
Cod fillet, skin on
2 bunch, green onions
Soy Sauce, to brush
Honey, to glaze
140g Mirin Sweet Rice Vinegar
A pinch, Salt
Preheat the oven to 355F.
To make the sauce, melt the butter and mix in the champagne, moron and salt in a sauce pan on high heat.
Once it starts to boil, while whisking and little by little, mix in the flour until everything is smooth and consistent. Set aside.
Lay green onion bunch on baking tray. These will hold your cod up, so space accordingly.
Clean and pat dry Cod fillets. Bush soy sauce on skin side, flip and place skin side down on top of green onions. Brush soy sauce on top and bake in oven for 15 mins.
Remove cod from oven and glaze with honey. Turn oven onto broil and wait for the temperature to reach 525F. Place cod back into oven until they are a golden brown colour.
Remove and plate the cod. Pour the champagne sauce on top, garnish with diced green onions (optional) and eat your little heart out!! I'm marrying myself after this one.. my god..😍.
